Pressing

When the curd is in the cheese mold, pressure is applied to the cheese mold via a cheese press for a certain amount of time. This compacts the outer layer of the cheese into a tightly closed rind and gives the cheese its characteristic shape. The rind protects the cheese from external influences and damage during transport.
