Thanks to the precisely controlled batching process, the product is heated to the correct temperature and held for the required time, fully in line with product specifications and food safety requirements. Subsequently, an efficient cooling system ensures controlled cooling back to the ideal processing temperature, for example before starting the fermentation process.

Advanced heat transfer and process control

The process boiler is designed according to the proven au bain-marie principle in which heating and cooling take place via water in a double-walled construction with pillow plate in both wall and bottom. This technology provides:

  • even heat transfer without hotspots
  • controlled and reproducible heating and cooling
  • optimal protection of sensitive dairy products

This creates a stable process and consistent product texture and flavor, essential for high-quality yogurt and dairy desserts.
